Description

This course is designed to introduce the fundamentals of chemistry that can be found in the multi-disciplinary process of brewing and appreciating beer. This will require a historical, economic, and aesthetic perspective, but will be grounded in fundamental chemistry of water, carbohydrates, solutions, and chemical reactions. Additional emphasis will be placed on yeast biochemistry, process engineering, and product analysis. The course will involve demonstrations, tasting food-grade reactants, and touring a commercial brewery. The laboratory portion of the course will allow for the application of the scientific method and hands-on experiments demonstrating aspects of the brewing process and will allow for tasting of professional and student-produced beer.
